This hazy-golden beer is not your average Hefeweizen; it's one of the only American Hefeweizens to use the traditional Bavarian style of open fermentation to produce wheat beers. This process, although labor-intensive, is worth the effort and is more efficent and clean. Using open fermentation, the unique Bavarian yeast strain used to make Kellerweis has the opportunity to entice more flavors and aromas from the fermenting beer.
